A New Year’s must for good luck and good eating. This Southern comfort food features black-eyed peas, andouille sausage, and smoked turkey leg, simmered with vegetables and seasonings until creamy.
1. Soak black-eyed peas overnight until doubled in size.
2. In a heavy-bottomed pot, brown the sliced andouille sausage. Add a drizzle of olive oil if needed. Remove and set aside.
3. In the same pot, sauté onion and bell pepper until tender.
4. Add garlic and cook until fragrant.
5. Add peas, chicken stock, seasonings (garlic powder, onion powder, dried parsley, black pepper, Cajun seasoning), and bay leaves.
6. Add smoked turkey leg and bring to a simmer.
7. Simmer for 2–3 hours, stirring occasionally and adding more liquid as needed.
8. Remove the turkey leg, shred the meat, and return it to the pot with the browned sausage.
9. Continue to cook until the mixture is creamy. Adjust seasoning if needed.
10. Serve over rice and enjoy!
