A flavorful and hearty Chicken Stew featuring seasoned chicken, bell peppers, onions, garlic, dark roux, and potatoes, with optional smoked sausage and boiled eggs, perfect for comfort food.
1. Season the chicken heavily and brown it in a heavy-bottom pot with olive oil. Remove and set aside.
2. Sauté onion and bell pepper in the same pot, scraping up the browned bits. Add garlic and cook until fragrant. I like to smash those veggies into almost a paste, but that’s optional.
3. Pour in broth and stir in dark roux. Let simmer for 30 minutes to an hour.
4. Add chicken back to the pot, along with smoked sausage if using. Season with parsley, Cajun seasoning, and black pepper.
5. Simmer on low, adding potatoes and boiled eggs near the end.
6. Cook until thick and flavorful. Serve over rice.
