Lasagna Roll Ups

1. **For the Meat Sauce:** In a large skillet, brown the ground beef over medium-high heat. Drain any excess fat. Add the diced small onion and cook until softened, about 5 minutes. Stir in the 32 oz jar of marinara sauce, 1 tsp Worcestershire sauce, 1 tsp red pepper flakes, and salt and pepper to taste. Bring to a simmer and cook for at least 10-15 minutes, allowing flavors to meld.
2. **For the Lasagna Noodles:** Cook 10 lasagna noodles according to package directions until al dente. Drain well and lay them flat on a clean surface or parchment paper to prevent sticking.
3. **For the Cheese Filling:** In a medium bowl, combine the 15 oz ricotta cheese, 2 cups mozzarella cheese (for filling), 1/2 cup grated Parmesan cheese, 1 egg, 1 tbsp garlic & herb or Italian seasoning, 1 tsp dried parsley, 1 tsp garlic salt, and 1 tsp black pepper. Mix thoroughly until all ingredients are well combined.
4. **Assemble the Roll-Ups:** Spread an even layer of the cheese filling over each cooked lasagna noodle. Spoon a small amount of the meat sauce over the cheese filling. Carefully roll up each noodle starting from one end.
5. **Prepare for Baking:** Spread a thin layer of the remaining meat sauce on the bottom of a 9x13 inch baking dish. Arrange the rolled lasagna noodles seam-side down in the dish. Top with any remaining meat sauce and then sprinkle with the remaining 2 cups of shredded mozzarella (for topping).
6. **Bake:** Cover the baking dish with foil and bake in a preheated oven at 350°F (175°C) for 30 minutes. For a golden-brown top, you can remove the foil for the last 5-10 minutes of baking.
