A delicious Southwest Crescent Ring made with seasoned rotisserie chicken, spinach, corn, and cheese, all wrapped in a flaky crescent dough and baked until golden brown. Perfect for a meal or appetizer!
1. Prepare the Filling:
• Heat 1 tbsp olive oil in a skillet over medium heat.
• Sauté the diced red bell pepper and diced jalapeño until tender.
• Add chopped rotisserie chicken, thawed and drained spinach, chopped green onions, and drained corn to the skillet. Season with 1 tbsp Mexican Fiesta seasoning (or taco seasoning) and cook for a couple minutes to heat through.
2. Prepare the Crescent Ring:
• Preheat your oven to 375°F.
• On a parchment-lined baking sheet, arrange crescent roll triangles in a circular shape, overlapping the wide ends to form a ring. The pointed ends should face outward, creating a sunflower shape.
3. Assemble the Ring:
• Sprinkle 4 oz of shredded Monterey Jack cheese over the wide ends of the dough.
• Spoon the chicken filling evenly around the ring, on top of the cheese.
• Sprinkle the remaining 4 oz of shredded cheese over the filling.
4. Close the Ring:
• Take the pointed ends of the triangles and fold them over the filling, tucking them under the wide ends to secure.
5. Bake:
• Bake at 375°F for about 20 minutes, or until the crescent dough is golden brown and cooked through.
6. Serve:
• Serve the Southwest Crescent Ring warm with avocado lime ranch dressing for dipping!
