Bake the Sweet Potatoes Wrap each sweet potato in foil and bake at 400°F for about 1 hour, or until fork tender. Let them cool slightly, then peel and mash. You’ll need about 3 cups total. 2. In a large mixing bowl, whisk together the eggs, brown sugar, melted butter, vanilla bean paste, vanilla extract, cinnamon, and a pinch of salt. 3. Add your mashed sweet potatoes into the bowl and mix with a hand mixer until smooth and fluffy. 4. In a separate bowl, combine the flour, brown sugar, chopped pecans, salt, and melted butter. Stir until it forms a crumbly texture. 5. Assemble the Casserole Spray a 2.5qt baking dish with nonstick spray. Spread the sweet potato mixture evenly in the dish. Add a layer of mini marshmallows on top, then sprinkle the streusel topping over the marshmallows. 6. Bake at 375°F for 25 minutes, or until the topping is golden and the marshmallows are melted and lightly toasted. 7. Let it cool for a few minutes before serving. The marshmallows will be perfectly gooey, and the topping adds that perfect crunch. #thanksgiving #sides #recipe #easyrecipe
